Steps to Vermin Compost?

My school is really into recycling. i have recently heard about vermin compost, and is interested in using it to Decompose things at school. what i would like to know is what the earthworms ( they use earthworms right?) will eat and how i could get/ build a vermin compost. any additional information or tips will be great!
